Recipe Ingredients for E's little soft ginger cookies

2 1/4 cups (315g) all purpose flour
2 tsp ground ginger
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground cloves
3/4 cup butter
1 cup granulated sugar
1 egg
1/4 cup molasses
55 g cane sugar

Recipe Directions for E's little soft ginger cookies

  1. In a medium bowl combine flour, ginger, baking soda, cinnamon, and cloves. Set aside.

  2. In an electric mixer with paddle attachment, beat butter (still relatively cold) in electric mixer on medium speed for 30 seconds. Beat in the 1 cup of granulated sugar. Blend well. Add egg and molasses; beating until uniform colour and consistency (you'll need to scrape down the sides of the bowl). Stir flour mixture into egg mixture. Dough will form up like ginger snap dough - fairly dry compared with a chocolate cip cookie dough for instance.

  3. Using a one tablespoon measure, shape dough into balls. Roll balls into the cane sugar to coat. Place balls about 2 inches apart onto an ungreased cookie sheet.

  4. Bake in a 350F oven for 10 minutes or until light brown and still puffed. (Do not overbake or they'll be as dense as hockey pucks). Cool on pans for 2 minutes, then transfer to wire rack to cool completely.
