Adapted from Bonnie Stern's Heartsmart Banana bread

Recipe Ingredients for E's Heartsmart Pumpkin Bread

1 cup pumpkin puree
140 g (1/2cup) Liberty Svelte Plain Yogourt
1 tsp. baking soda
1 egg
3/4 cup brown sugar
1/4 cup canola oil
1 tsp. vanilla
1/2 cup whole wheat flour
1 cup all-purpose flour
1 tsp. baking powder
1 pinch salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves

Recipe Directions for E's Heartsmart Pumpkin Bread

  1. In a small bowl combine pumpkin, yogurt, and baking soda.

  2. In a separate bowl (or large measuring cup), combine egg, sugar, oil, and vanilla. Blend well.

  3. In a large bowl combine flours, baking powder, and salt and spices. Mix together well.

  4. Combine pumpkin mixture with oil mixture. Add to dry ingredients in the large bowl and stir togther just until moistened.

  5. Spoon batter into a non-stick or lightly oiled or parchment lined 8x4 inch loaf pan.

  6. Bake in a preheated 350F oven for 50 to 60 minutes (I find 50 minutes is plenty), or until loaf springs back when gently touched.
