Easy quick unique salad with loads of Vitamns A and C and a good source of iron.

Recipe Ingredients for E's Hail-to-the-kale salad

3 cups kale, chopped
3 cups carrots, grated
1 &1/2 cups red cabbage, shredded
1/2 cup pumpkin seeds, unsalted
1/2 cup sunflower seeds, unsalted
1/4 cup canola oil
1/4 cup light soy sauce
3 tablespoons balsamic vinegar
1 teaspoon dried oregano

Recipe Directions for E's Hail-to-the-kale salad

  1. Wash and chop kale.

  2. In a skillet dry toast seeds on medium until lightly toasted. Remove from heat and let cool.

  3. In a large bowl combine chopped kale, carrots, cabbage and seeds, set aside.

  4. In a small bowl whisk together oil, braggs liquid aminos (light soy sauce), balsamic vinegar and oregano.

  5. Pour mixture over vegetables and toss until evenly coated and chill 2 hours before serving. This salad keeps well in the refrigerator for 2-3 days.
