Original recipe from www.myrecipes.com Excellent way to sneak in veggies. Could easily be made with all egg whites since the colour in the dish comes from the tomatoes and parsley.

Recipe Ingredients for E's Goat Cheese and Tomato Strata

8 ounces whole wheat bread, cut into 1 inch cubes
1 1/2 cups onion, chopped
1 teaspoon extra virgin olive oil
2 garlic cloves, minced
2 1/2 tablespoons fresh parsley, chopped
1 cup 1% milk
2 large eggs
5 egg whites
1 tablespoon fresh sage, chopped
28 ounces canned tomatoes, salt free, chopped
3 ounces goat cheese, crumbled

Recipe Directions for E's Goat Cheese and Tomato Strata

  1. In a medium bowl combine parsley, eggs, and egg whites with milk; whisk together and set aside.

  2. Heat olive oil in a large non-stick skillet, saute onion on medium-low for three minutes, add garlic and sage and saute an additional minute. Preheat oven to 425F

  3. Add tomatoes and their juices then mix in cubed bread.

  4. Transfer tomato-bread mixture to a 9x13 inch casserole that has been sprayed with Pam.

  5. Top tomato-bread mixture with crumbled goat cheese, distributing evenly.

  6. Pour egg mixture over tomato-bread mixture and pat down so the egg mixture covers the bread (if you don't, the bread sticking out will crisp up)

  7. Bake in a preheated 425F oven for 25 minutes (or until set)

  8. Enjoy!
