Sweet and sour potato salad - a nice alternative to the mayo heavy versions.

Recipe Ingredients for E's German-style Potato Salad

5 cups potatoes, boiled and cut into bite size pieces
1/2 cup sugar
1/2 cup red wine vinegar
6 slices turkey bacon
1 cup water
1/4 cup onion, diced
2 tablespoons canola oil
2 tablespoons all purpose flour

Recipe Directions for E's German-style Potato Salad

  1. Prepare bacon, cool, crumble or cut into pieces and set aside.

  2. In the pan the bacon was made in add canola oil, flour and onion to make a roux, add water, and vinegar and cook til mixture resembles gravy in texture.

  3. Place potatoes in a medium (3 quart) bowl and add bacon, and pour sauce over top and stir gently.

  4. Serve warm(serving is approximately 3/4 cup)
