Recipe Ingredients for E's Fantastic Vegetable Alphabet Soup

4 cups vegetable broth
2 cups water
2 cups carrot, diced
2 cups zucchini, diced
2/3 cup celery, diced
14 oz. canned tomatoes, diced
2 cups skim milk, fluid
1 cup vegetable alphabet noodles
1 tsp. garlic paste
1 tsp. oregano, dried
2 tsp. basil, dried

Recipe Directions for E's Fantastic Vegetable Alphabet Soup

  1. In a large pot, bring stock and water to a boil, add noodles and cook until just under al dente, about 8 minutes.

  2. Remove noodles from heat and strain from stock and set noodles and stock aside.

  3. Add garlic paste, celery and carrot to pot, saute at medium heat in a small amount of stock until carrots are softened - about 8 minutes.

  4. Add remaining stock to pot and add canned tomatoes and their juice, bring to a boil then simmer for 15-20 minutes.

  5. Add zucchini and simmer for an additional 5 minutes (adding the zucchini sooner will mean it turns into overcooked mush).

  6. Puree soup using either a stick blender, or by removing soup from heat and transferring in batches to a stand blender.

  7. Return soup to pot and add milk and stir together. Add noodles back to the pot and heat through.

  8. Makes 12 one cup/247g servings
