Delicious alternative to the mayonnaise heavy version :)

Recipe Ingredients for E's Coleslaw

3 cups red cabbage, shredded
1 cup green cabbage, shredded
2 cups carrots, shredded
1/4 cup onion, minced
1/4 cup sugar
1/4 cup white wine vinegar
1/8 cup extra virgin olive oil
1 teaspoon dry mustard
1/2 teaspoon salt

Recipe Directions for E's Coleslaw

  1. In a small bowl mix together oil, vinegar, sugar, mustard, and salt, set aside.

  2. In a food processor, shred carrots and cabbage.

  3. Mince onion.

  4. In a large salad bowl mix together carrots, cabbage, and onion, and pour in oil & vinegar mixture.

  5. Refrigerator 3+ hours to allow flavours to develop.
