Adapted from Bonnie Stern's Complete Heartsmart. Fat and calories can be lowered if you use skim milk and egg substitute (which I didn't have at the time). This batter makes 20 pancakes(1/3 cup batter each) so a serving is 2 pancakes. Optional: Serve with E's Carmelized Apples instead of syrup.

Recipe Ingredients for E's Cinnamon Banana Pancakes

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup brown sugar
2 tsp. baking powder
2 tsp. ground cinnamon
1/2 tsp. baking soda
1/2 tsp. salt
2 large eggs
2 cups buttermilk
1 tsp. vanilla extract
1 tbsp. canola oil (divided)
1 1/2 cups banana, mashed

Recipe Directions for E's Cinnamon Banana Pancakes

  1. In a large bowl, combine flours, sugar, baking powder, baking soda, cinnamon and salt.

  2. In a separate bowl, beat together eggs, milk, vanilla and 2tsp. oil. Mix in bananas.

  3. Add banana mixture to dry ingredients and combine to make a thick batter. Do not overmix; batter can be lumpy.

  4. Heat remaining 1 tsp oil in a non-stick skillet on medium-low heat. Spread 1/2 cup batter in skillet. Cook for 2-3 minutes per side, or until bubbles appear on surface. Repeat until all pancakes are made. Suggestion: Heat oven to 200F and place pancakes on cookie sheet to keep them warm while making the remaining pancakes.
