Under 200 calories, only 5g fat each AND 3g protein per muffin! Much skinnier than the store bought kind and still a rich chocolate taste :)

Recipe Ingredients for E's Chocolate Oatmeal Muffins

3 cups all purpose flour
2 cups PC Organics Quick Oats
1/2 cup cocoa powder
1/2 teaspoon salt
1 cup sugar
2 tablespoons baking powder
1/2 teaspoon salt
2 cups 2% milk
1/2 cup organic canola oil
2 eggs, lightly beaten
1 tablespoon icing sugar (optional)

Recipe Directions for E's Chocolate Oatmeal Muffins

  1. Line medium muffin cups with paper baking cups, or lightly grease the bottoms only.

  2. In a large bowl mix together flour, cocoa, oats, baking powder,sugar, and salt.

  3. In a separate bowl mix together egg, oil and milk.

  4. Add egg mixture to dry ingredients and mix until just combined (over mixing causes the muffins to be dense).

  5. Spoon mixture evenly into prepared muffin tins. Bake at 400F for 18 to 20 minutes. Cool on rack and dust with powdered sugar(if desired).
