Recipe Ingredients for E's Bison Chili

28 oz. black beans, rinsed and drained
28 oz. tomatoes, drained and diced
2 1/2 cups pureed tomato, canned
16 oz. ground bison
1 tsp. cumin
1 1/2 tsp. dry mustard
1 tsp. canola oil
1 onion, chopped
2 tablespoons cocoa powder

Recipe Directions for E's Bison Chili

  1. In a large pot saute onion, spices and ground bison in canola oil until onion is opaque and bison is cooked through, cocoa powder, tomatoes, and tomato puree and bring to a low boil.

  2. Reduce heat to low and add beans, stir together, and simmer for 30 minutes.

  3. Great right out of the pot, even better the next day. This is the version we serve the kids who aren't so into spice. Add a bit of chili powder to taste to add some heat.
