Delicious little soft cookies that are a great alternative to making banana bread out of overripe bananas.... (The original recipe called for 1/2 c w/w flour but I found the batter too wet so added 1/4 cup...) They're so moist you could probably bake them as bars in a 9x13 pan too. Serving size = 1 cookie. Enjoy!

Recipe Ingredients for E's Banana Oatmeal Raisin Cookies (from Julie VanRosendaal's One Smart Cookie)

1/4 cup butter, softened
1/2 cup sugar
1/2 cup packed brown sugar
1 cup bananas, mashed
1 large egg
2 teaspoons vanilla extract
2 cups quick oats
1/2 cup all-purpose flour
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon cinnamon
1 pinch salt
2/3 cup raisins

Recipe Directions for E's Banana Oatmeal Raisin Cookies (from Julie VanRosendaal's One Smart Cookie)

  1. In a medium bowl beat together the butter, and sugars until well combined. The mixture will have the consistency of wet sand. Add the bananas, egg, and vanilla and beat until well blended...but don't worry about getting out all the banana lumps.

  2. In another medium bowl, stir together the oats, flours, baking soda, cinnamon and salt. Add to the banana mixture and stir by hand until almost combined. Stir in raisins and stir until just blended.

  3. Drop by tablespoonfuls 2 inches apart on a cookie sheet lined with parchment paper or sprayed with cooking spray. Bake at 350F for 12-14 min (mine took 14 min on insulated cookie sheets) until the edges are golden but the cookies are still soft in the middle. Transfer to a wire rack to cool.
