Mix what you got and do some of your own experimenting - that's what I did... basically.. baked veggies and cheese.

Recipe Ingredients for Erwin Ratatouille

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
1 onion Yellow Onion
1 cup chopped raw Baby Bella Mushrooms Packaged
2 medium Squash, Summer, Zucchini, Includes Skin
7/10 cup, sliced Peppers, Jalapeno
1/2 cup fresh Italian Parsley
2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 tbsp Olive Oil
1 1/2 cup 3 Cheese Italian
4 clove Garlic

Recipe Directions for Erwin Ratatouille

Preheat oven to 350. Use a little olive oil in frying pan and put in chopped eggplant and garlic. Simmer until Soft. While that's going chop up all other veggies. Take softened eggplant/garlic mixture and put into a 9 by 11ish baking pan. Layer veggies and cheese as you wish and bake for 45 minutes. ( This was a spin on the first ratatouille recipe that I found on this site. Trying my own thing and trying to keep track!) 1 serving = 1 cup. (Makes 8 servings so... 8 cups) :D
