This variation of a traditional Swiss breakfast is packed with protein and fiber.

Recipe Ingredients for Erik's Swiss Muesli

1 med. apple, cored,unpeeled, and diced
4 tbs. lemon juice
1/2 cup rolled oats
3/4 cup plain yogurt, non-fat
3 tbs. raw pumpkin seeds
3 tbs. raw sunflower seeds
3 tbs. flax seeds

Recipe Directions for Erik's Swiss Muesli

  1. Core and dice an apple of any variety and place in a non-reactive container.

  2. Sprinkle the diced apple with the lemon juice.

  3. Add the rest of the ingredients and stir.

  4. If it seems a little thick add 1/4 to 1/2 cup of water or milk to thin it out.

  5. Cover and refrigerate overnight, at least 8 hours.

  6. The next morning, sprinkle with a little cinnamon and enjoy!

  7. Chopped nuts, seasonal fruits, and berries may be substituted, but use dried fruits and raisins sparingly.
