Less than 90 calories per serving -- although if you don't serve with rice, you can probably easily polish off at least two servings. This is especially quick/easy if you have precooked chicken breast.

Recipe Ingredients for Eric's Quick Healthy Stir-Fry

6 cups frozen stir-fry veggie mix
12 oz boneless skinless chicken breasts
2 tbsp. garlic
1/4 cup lite soy sauce
4 tbsp. splenda
1 tsp. ground ginger

Recipe Directions for Eric's Quick Healthy Stir-Fry

  1. Cook chicken in a skillet or on a grill -- chop or slice into strips as desired.

  2. Throw the veggies in a nonstick skillet, and cook until preferred consistency.

  3. While veggies are cooking, mix garlic, soy sauce, splenda, and ginger in a small bowl.

  4. When veggies are just done, pour in sauce and stir in chicken.

  5. Serve Hot.
