Lentil Soup based on Alton Brown's recipe. This soup is made with water instead of chicken broth. The majority of the sodium comes from canned tomatoes.

Recipe Ingredients for Eric's Lentil Soup

4 tablespoons olive oil
1 cup onion, chopped
1 cup carrot, chopped
1 cup celery, chopped
2 pounds lentils
29 oz
16 cups water
1 teaspoon coriander
1 teaspoon cumin
1 teaspoon ground pepper

Recipe Directions for Eric's Lentil Soup

  1. Place the olive oil into a large soup pot and set over medium heat.

  2. Once hot, add the onion, carrot and celery and sweat until the onions are translucent, approximately 6 to 7 minutes.

  3. Add the lentils, tomatoes, water, coriander, cumin and pepper and stir to combine.

  4. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils are tender, approximately 35 to 40 minutes.
