Erica's Mac N Cheese Recipe

Sometimes you just need mac n cheese. This is my recipe for a (slightly) healthier version. Using cottage cheese and skim or soy milk cuts down a little on the fat content. A butter substitute could probably be used, or more milk could probably replace some of the butter.

Recipe Ingredients for Erica's Mac N Cheese

8 ounces elbow macaroni
4 tablespoons butter
8 ounces cottage cheese
1/3 cup skim milk
3/4 cup shredded cheddar cheese
3/4 cup shredded colby jack cheese

Recipe Directions for Erica's Mac N Cheese

  1. Boil macaroni and water together (with a small amount of salt in the water) for 10-15 minutes.

  2. Strain macaroni, pour into a glass bread or cake pan.

  3. Melt butter in with the hot macaroni noodles.

  4. Pour milk into pan with noodles (no need to measure the milk too carefully).

  5. Scoop half the the cottage and shredded cheeses into the pan and mix so that it is evenly distributed throughout the noodles.

  6. Layer the rest of the cottage cheese on top and cover with the rest of the shredded cheese.

  7. Bake in oven until cheese is melted (longer if you like a little bit of burnt cheese on the edges).
