1/2 cup vegetable oil
1 cup cornmeal
3/4 cup self-rising flour
1 cup cream-style corn
2 eggs
1 cup sour cream
1 cup sharp cheddar cheese
1/2 teaspoon cayenne pepper, optional
14 1/2 ounce red kidney beans, rinsed and drained
15 ounce corn, drained
1 medium Vidalia onion, finely chopped
1 large green bell pepper, finely chopped
3 large tomatoes, chopped
2 cups cheddar cheese
8 ounce ranch dressing
1 Chopped fresh parsley leaves, for garnish
