Recipe Ingredients for ENSALATA A LA RICOTTA Y FINOCCHIO_Raw JULIANO's

2 cups fennel bulbs, chopped
2 tablespoons thyme, (lemon fresh) chopped
2 tablespoons thyme, fresh creeping, chopped
2 tablespoons thyme, fresh silver,chopped
2 tablespoons sage, fresh, chopped
2 tablespoons rosemary,fresh de-stemmed and chopped
2 tablespoons mint, lemon mint, (or salad burnet)
2 tablespoons oregano, fresh Greek
2 tablespoons mint, (chocolate mint)
1/2 cup red bell pepper, chopped

Recipe Directions for ENSALATA A LA RICOTTA Y FINOCCHIO_Raw JULIANO's

In a salad bowl combine fennel bulbs, lemon thyme, creeping thyme, silver thyme, sage, roseŽmary, salad burnet, Greek oregano, chocolate mint, and bell pepper. In a blender combine white wine, selected water/juice, Raw Ricotta Cheese (see recipe), balsamic vinegar, lemon juice, and olive oil. Blend well and pour blender contents over salad mix. Toss and serve.
