Popular mexican potato salad. Also nice with diced steamed or boiled carrots.

Recipe Ingredients for Ensalada Russa

5 medium potatoes
12 oz chicken breast
2/3 cup fat free mayonaise
12 oz corn kernels
4 oz frozen peas
1/4 cup 1% milk

Recipe Directions for Ensalada Russa

  1. Boil the potatoes. Mash with the milk and mayo.

  2. Boil the chicken breast and shred by hand. Add to the potatoes.

  3. Thaw or steam the corn kernels and frozen peas and add to the potatoes.

  4. Enjoy!
