This is a great salad for summer, but it is also good for a light lunch or dinner.

Recipe Ingredients for Ensalada Fresca (fresh salad)

5 ounces mixed greens (spinach, radichio, lettuce)
3 large strawberries (wedges)
1 medium tomato (wedges)
1 small onion (sliced)
15 1/2 ounces can pink beans
15 ounces can small lima beans
5 tablespoons of Tuscan Romano Dressing (Bountifuls by Wish Bone)
2 tablespoons balsamic vinegar

Recipe Directions for Ensalada Fresca (fresh salad)

  1. Drain the two cans of beans and rinse beans with fresh water.

  2. Put beans in a bowl and add the onions, the balsamic vinegar, the tomato and straberry wedges, mixing well. Allow the beans to sit covered in the refrigerator for at least half hour.

  3. Remove beans mixture from refrigerator and add the Tuscan Romanon dressing. Mix well.

  4. On a salad bowl toss the greens together with the bean mixture.

  5. Note: Add chopped grilled chicken if more protein is desired to make the salad a main course.
