12 oz. dry fettuccine (113664)
1 cup (fat-free) half-and-half (97266)
1 tbsp. flour
1/8 tsp. salt
1/8 tsp. pepper
3 oz (3/4 cup) freshly grated Parmesan cheese, divided (1033)

Recipe Directions for Enlightened Fettuccini Alfredo

  1. Cook pasta according to package directions; drain.

  2. Meanwhile, whisk together half-and-half, flour, salt and pepper in large saucepan. Bring to a boil over medium heat, whisking constantly, until thickened. Remove from heat; whisk in 1⁄2 cup of the cheese. Add pasta; toss to coat. Serve with remaining 1⁄4 cup cheese.)
