Recipe Ingredients for Enhanced Cheesy Beef Enchilada

2 1/2 cups hamburger helper cheesy enchilada
1 lb beef, ground, 85% lean
1 can corn, sweet yellow
2 cups pinto beans, cooked, boiled, without salt
1 yellow pepper, chopped
2 1/4 cups water
1/2 cup milk, 1%

Recipe Directions for Enhanced Cheesy Beef Enchilada

  1. Brown 1 lb ground beef. Drain.

  2. Add sauce packet, rice packet, water, and milk. Heat until boiling, then cover, turn heat down and simmer 10 minutes.

  3. Add corn, beans, and pepper. Reheat until bubbly, then cover, turn heat back down and simmer 15 more minutes. After cooking, allow beef mixture to stand 5 minutes. Sauce will thicken as it stands.

  4. Meanwhile, mix topping packet from hamburger helper box with a small amount (3-4 tbsps) of milk. Pour over meat mixture.
