Muffins for breakfast or make a quick pizza out of halves.

Recipe Ingredients for English Muffins

3 cups warm water
6 cups whole wheat flour
1 1/2 tbsp yeast
2 tbsp raw sugar
1 1/2 tsp salt
1 tsp baking soda

Recipe Directions for English Muffins

Add all ingredients (starting with 5 cups of flour) to the mixer bowl and knead 5 to 7 minutes in mixer or 12-15 minutes by hand until dough is soft and pliable. If it's too wet add some more flour, but dough should be rather moist or you will have a heavy muffin. Roll dough about 1/2 inch thick on cornmeal sprinkled surface. Cut with a biscuit cutter. Let rise and double. Bake on a lightly greased griddle over medium heat about 8 to 10 minutes per side or until done. Especially delicious if made with kamut flour. Makes approximately 24 small muffins.
