Recipe Ingredients for English Muffin Egg Baskets

1 english muffin
1/2 cup egg whites
1 1/2 ounce mozzarella cheese
2 cups baby spinach
1 clove garlic
1 ounce red pepper
1/2 teaspoon crushed red pepper

Recipe Directions for English Muffin Egg Baskets

  1. Set oven to 350. Split english muffin and using a rolling pin, roll out muffin - it may take a minute. Push down into jumbo muffin tin and bake for 15 minutes.

  2. Meanwhile, using Pam, saute garlic, spinach, red pepper, crushed red pepper until spinach is wilted.

  3. Remove muffins from oven - divide spinach mixture evenly between the two halves, pour 1/4 cup of egg white over top of spinach mix, then top with 3/4 ounce of mozzarella on each one, bake an additional 10 to 15 minutes. Serve immediately.
