Recipe Ingredients for EngineStarter Muffins

1 1/2 cups oatmeal
1/3 cup milk
3/4 cup whole-wheat flour
1/8 cup flax seed, ground
1 scoop whey protein
2 tsp baking powder
1/2 tsp baking soda
3 tsp cinnamon
10 prunes, chopped
10 dried apricots, chopped
1/3 cup walnuts, chopped
1 egg, beaten
4 tbsp grapeseed oil (or Canola)
2 tbsp maple syrup
1/2 cup unsweetened apple sauce
1/8 cup demerara sugar

Recipe Directions for EngineStarter Muffins

  1. Preheat oven to 400F.

  2. Combine oatmeal and milk in a bowl and let soak. In a separate large bowl, mix flour, ground flax seed, whey protein, baking powder, baking soda, cinnamon, dried fruit, and walnuts.

  3. In another bowl, combine egg, oil, syrup, sugar, and apple sauce. Add to oatmeal mixture, then stir in flour and mix.

  4. Spoon batter into paper-lined muffin cups. Bake for 15-18 minutes or until tops spring back when lightly touched. Cool on a wire rack.
