This tasty vegetarian (if you use veggie broth) dish is classic amer-mexican comfort food... gooey, cheesy and delicious. Easy and quick to make, too!

Recipe Ingredients for Enfrijoladas Verdes

1.5 cup refried beans
6 oz green salsa
12 oz cheddar cheese
3 oz Light Havarti Cheese Sliced
1 cup chicken broth
10 flour tortillas

Recipe Directions for Enfrijoladas Verdes

  1. Preheat your oven to 350 F and spray a deep rectangular baking pan with Pam.

  2. Fill each tortilla with a big spoonful of refried beans and a sprinkle of shredded cheddar, monterrey jack or any other melting cheese. Roll tortillas up and place side by side in baking pan until they cover the bottom of the pan completely.

  3. Mix salsa and broth together, pour over tortilla rolls.

  4. Place the slices of havarti cheese over the tortillas so they're all partly covered by the cheese.

  5. Bake for 15 -20 minutes until cheese is melted and salsa is bubbly.

  6. Separate tortillas and serve with a little sauce spooned over the top.
