My first attempt at homemade energy bars, adapted from a BBC Good Food recipe. They're in the oven so we'll see how they turn out!

Recipe Ingredients for Energy Bars

280 grams Peanut Butter, Chunk Style
3 tbsp Honey, Strained Or Extracted
250 grams Jumbo OATS
70 grams Sultanas
85 grams Mixed Chopped Nuts
50 grams Sesame Seeds
50 grams Dried Cranberries
100 grams Apricots, Dried, Sulfured, Uncooked

Recipe Directions for Energy Bars

  1. Melt peanut butter in a pan until runny (don't do this for too long as it starts to get stiff).

  2. Pour in dry ingredients (except apricots) and mix thoroughly. Add honey and stir until everything is covered.

  3. Pour half the mixture into a baking tin - I used a large circular one, BBC recommends 23cm x 23cm. Finely chop the apricots and scatter over the bottom layer (add more if you wish).

  4. Pour over the rest of the mixture and smooth down with the back of a metal spoon. Bake in the oven at 160C for 35 mins. Allow to cool completely and then cut into wedges/bars.
