yummy healthy bars, kids love em. great alternative to standard cookies. Add 1/2 cup dried cherries, rasins, chopped dates or whatever!

Recipe Ingredients for energy bars

2 cups rolled oats
1/2 cup whole wheat flour
1/3 cup bran
1/3 cup flax meal
1/2 cup sweetened coconut
1/2 cup chopped pecans
1/2 cup chocolate chips
1/2 cup honey
1/3 cup smart balance light
1 large egg
1/3 cup peanut butter

Recipe Directions for energy bars

  1. mix dry ingredients

  2. heat honey, PB and margarine until mixable

  3. let cool and add beaten egg

  4. mix wet and dry

  5. pat onto baking sheet to 2cm thick (covers about 3/4 of a cookie sheet)

  6. bake at 350 for 20-25 minutes.

  7. cut while warm then store in air tight container. (refrigerate, if they last linger than a day or so. - bran may spoil)
