Energy Bar Recipe

Use before, during or after exercise for a "raw" energy boost

Recipe Ingredients for Energy Bar

1 1/2 cups prunes
1/3 cup dried cranberries
1/3 cup dried apricots
1/4 cup tahini
3 tbsp lemon juice
1 tbsp lemon zest
1/3 cup mango
1/3 cup blueberries
3/4 cup flax meal
1/2 cup almonds
1/2 cup oats

Recipe Directions for Energy Bar

  1. Combine prunes, cranberries, apricots, flax meal, almonds (or any other raw nut) and oats together in a food processor and blend until finely chopped.

  2. Add tahini, lemon juice, zest, mango and blueberries and blend in the food processor until smooth.

  3. On a cutting board, scoop out the mixture and form into a log shape using saran wrap. Do not use your fingers only as the mixture will stick to your fingers.

  4. Slice the log into 8 individual slabs and individually wrap each bar with saran wrap.

  5. Place into the freezer and use whenever you need a boost!

  6. NOTE that the bars will not freeze solid and this is okay!
