Makes 20 servings



Nutrient dense snack rich in iron, lauric acid and energy. Don't be fooled by the coconut, it is a very healthy fat which assists in fat-burning.

Recipe Ingredients for Energy Balls

25 dried apricots
10 dried pitted dates
1 cup cream of coconut (coconut butter)
1 tablespoon coconut oil
1/4 shredded coconut

Recipe Directions for Energy Balls

  1. Roughly chop the apricots and the dates.

  2. Process apricots in food processor until finely chopped and beginning to come together.

  3. Add the dates and pulse a couple of times.

  4. Add the coconut butter and process until combined.

  5. Scrape down sides and continue to pulse.

  6. If mixture does not come together add some of the coconut oil and pulse again.

  7. Chill in the fridge to firm up.

  8. Last up to two weeks refrigerated.
