Recipe Ingredients for Endurance Athlete Breakfast 1

1/2 cup mushrooms
1/2 cup spinach
1/2 cup red onion
1/2 red bell pepper
3/4 cup egg beaters
2 teaspoon of olive oil
1/2 large banana
1 english muffin,whole wheat
1 tablespoon of strawberry preserve

Recipe Directions for Endurance Athlete Breakfast 1

  1. Chop mushrooms, spinach, onion, and bell peppers.

  2. Sear chopped vegetables in frying pan with 1 teaspoon of olive oil.

  3. In seperate pan cook egg with 1 teaspoon olive oil.

  4. Once vegetables are cooked, pour on center of cooking eggs. Fold egg over veggies.
