Recipe Ingredients for Endive and red pepper salad

1 red bell pepper
200 g belgian endive
1 scallion

Recipe Directions for Endive and red pepper salad

  1. Roast the red pepper over an open flame or in a broiler. When it is nicely blackened, set it aside to cool.

  2. Chop the belgian endive and the scallion finely and toss together in a bowl.

  3. When the pepper is cool, peel the skin off and remove the core and the seeds. Cut the pepper flesh into short strips and add them to the endive and scallion.

  4. Chill the salad until just before serving, then toss with your favorite dressing.
