Recipe Ingredients for End of Summer Vegetable Bake

2 1/2 cup cauliflower, in small florets
2 cups broccoli, in small florets
1 small onion, chopped
1 clove garlic, minced
1/2 tablespoon butter
1 medium tomato, chopped
1/2 teaspoon basil, dried
1/2 teaspoon oregano, dried
1/2 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon tabasco sauce
2 eggs
3 tablespoon half and half
3 ounces swiss cheese, shredded (3/4 cup)
2 tablespoon parmesan cheese

Recipe Directions for End of Summer Vegetable Bake

  1. Place cauliflower and broccoli in saucepan with small amount water. Bring to boil. Reduce heat, cover and simmer 5-10 minutes until tender-crisp. Drain and set aside

  2. Saute onion and garlic in butter until tender. Stir in tomatoes, seasonings, cauliflower and broccoli. Cook, uncovered until heated through, about 4 minutes, stirring. Remove from heat and set aside.

  3. In large bowl, beat eggs and cream, stir in 1/2 cup swiss cheese, parmesan and the vegetable mixture. Transfer to greades shallow 2 quart dish. Sprinkle with remaining swiss cheese

  4. Bake uncovered at 375 for 25-30 minutes or until knife inserted near the center comes out clean. Let stand 10 minutes before serving
