Use the leftover roast beef from Sunday's dinner!

Recipe Ingredients for Encore Sirloin + Bean Minestrone

2 cups zucchini, chopped
1 large carrot, chopped
2 tbs shallot (1 small shallot)
6 oz beef, top sirloin (leftover roasted)
28 fl oz tomatoes
6 fl oz garbanzo beans
6 fl oz kidney beans
6 fl oz white beans
2 tsp balsamic vinegar
1/4 tsp salt
1/4 tsp black pepper
1/2 cup chicken stock
1/2 cup red wine

Recipe Directions for Encore Sirloin + Bean Minestrone

  1. Saute zucchini, carrot and shallot in chicken stock in large pot til veggies start to soften.

  2. Add all remaining ingredients, bring to a boil, then turn heat to low.

  3. Simmer for at least 2hrs to blend flavors :P
