Recipe Ingredients for Encilada Casserole

12 oz Ground Turkey Lean
1 cup, chopped(160 g) Onions
1 tbsp Vegetable Oil Spread
3 tsp Garlic
0.14 cup All Purpose Flour
1 cup (8 fl oz) Soup, Beef Broth, Cubed
3 teaspoons McCormick's Taco Seasoning
8 oz Tomato Sauce
4 tortilla Tortilla Wraps
42 g Shredded Low Moisture Part Skim Mozzarella Cheese

Recipe Directions for Encilada Casserole

  1. Preheat oven to 400 degrees.

  2. Cook turkey and onion in a large pan over medium heat for approx. 6 minutes

  3. In a medium sauce pan over medium high heat, melt butter. Add garlic, saute for 1 minute. Sprinkle with flour, stir constantly. Add broth, taco seasoning and tomato sauce to pan. Bring to a boil; cook 2 minutes, stirring occasionally. Add 1 1/2 cups of tomato mixture to turkey mixture, reserving 1/2 cup.

  4. Place 1 tortilla in a 9-in pie plate and top with 1 cup of turkey mixture. Repeat, ending with a tortilla. Spread reserve tomato mixture over tortilla. Top with cheese.

  5. Bake at 400 degrees for 10 minutes or until cheese is melted. Cool slightly, cut into 4 pieces.
