Enchilladas Recipe

Recipe Ingredients for Enchilladas

67 grams Wholemeal Tortillas
1 medium (2-1/2" dia) Onions
1 medium Carrots
400 grams Tomatoes
0.5 Teaspoon Chilli Powder
50 grams Lentils
100 grams Yoghurt
20 grams Cheddar Cheese

Recipe Directions for Enchilladas

  1. Pre-heat the oven or grill to a medium heat.

  2. Fry the onion and carrot in a little oil until soft. Add the chilli powder and fry for another minute. Add the tomatoes, lentils and 300ml of water and bring to the boil. Turn down the heat and simmer for about 20 minutes until the lentils are tender.

  3. Pour some of the sauce in a dish to cover the bottom. Wrap some of the sauce in a tortilla and place in the dish folded side down. Cover with the rest of the sauce and a mixture of yoghurt and grated cheddar.

  4. Bake/grill for up to 10 minutes until golden brown. Serve with salad.
