Recipe Ingredients for Enchiladas Verdes pequinas

4 tortillas
1 chopped yellow onion
1 package frozen chopped spinach
2 cans cream of chicken soup
3 minced green onions
4 oz. chopped green chiles
6 oz. grated cheese
3 oz. Sour Cream

Recipe Directions for Enchiladas Verdes pequinas

  1. roll onion and cheese in each tortilla. Combine soup, spinach, green onions and chiles in Blender and mix. once semi-smoothe add sour cream then mix till a nice light green color.

  2. Pour blended mixture over rolled tortillas in medium sized cassarole dish. (make sure to shift tortillas so sauce goes underneath as well as on top)

  3. Sprinkle some left over cheese on top.

  4. Bake at 350 degrees for 30 mins.
