Enchiladas with cheese and onion, covered in a chile verde sauce.

Recipe Ingredients for Enchiladas Verde

8 oz monterey jack cheese
10 oz salsa verde (chile verde sauce, not salsa)
12 corn tortillas
2 tbsp avocado oil
1 onion, diced
4 oz green onion, chopped

Recipe Directions for Enchiladas Verde

  1. Preheat oven to 350.

  2. Heat avocado oil in skillet and SWEAT onion untill translucent.

  3. Put 6 corn tortillas in the oven for 3 minutes.

  4. Shred monterey jack cheese.

  5. remove corn tortillas, put aside; add next 6 tortillas to oven for 3 minutes. Remove after 3 minutes.

  6. Take each tortilla and dip in verde sauce.

  7. Roll each tortilla with onion and cheese filling.

  8. Bake for 20 minutes.

  9. Add green onion on the top.

  10. Serve with sour cream or plain yogurt, mexican rice and beans.
