Very filling and healthy!!! I usually divide this recipe in half and freeze half of the prepared enchiladas for another meal.

Recipe Ingredients for Enchiladas

1 pound ground beef
2 1/4 cups Bushs Best Black Beans
2 cups refried beans
10 ounces enchilada sauce
10 1/4 ounces Beef Gravy
8 whole wheat tortillas
1 cup shredded cheddar cheese
2 cups brown rice

Recipe Directions for Enchiladas

  1. Brown beef until cooked through; rinse off fat and return to skillet. Add black beans and refried beans and mix gently to combine.

  2. In a small bowl, combine enchilada sauce and beef gravy. Set aside.

  3. Fill each tortilla with equal portions of rice and the beef and bean mixture. Roll up and place in a 9x13 baking dish.

  4. Once all tortillas have been filled, spoon enchilada sauce mix over them.

  5. Sprinkle with cheese. Bake at 350 until heated through.
