Delicious homemade enchiladas. Serves 4, 2 enchiladas each.

Recipe Ingredients for Enchiladas

8 tortilla 8'' Medium Flour Tortillas
3 breast, bone and skin removed Chicken, Breast, Meat Only
19 oz Old El Paso Sauce Enchilada Mild
1 can (12 oz) yields Corn, Sweet, Yellow
2 cup Taco Shredded Cheese

Recipe Directions for Enchiladas

  1. Preheat oven to 350. Cook chicken, dice cooked chicken, put in bowl.

  2. Add corn and chiles to chicken. Pour enough enchilada sauce to get chicken, corn, chiles covered but not too much.

  3. Take 1 tortilla, scoop a couple of spoons of mixture in strip down middle. Put some cheese on top of that. Fold up like burrito, put in pan seam-side down. Do same for all tortillas.

  4. Line up enchiladas in pan, pour rest of enchilada sauce over top of all enchiladas, sprinkle the shit out of it with cheese. Cook for 25 min, so cheese is bubbly.
