Enchiladas with chicken, black beans, corn, goat cheddar cheese & spinach. YUM!

Recipe Ingredients for Enchiladas

5 serving chile
2 breast, bone and skin removed Chicken, Breast, Meat Only
15 oz Black Beans, Organic
1 cup Frozen Cut Corn
1 cup Spinach
28 oz Enchilada Sauce
6 oz Goat Cheddar Firm Cheese

Recipe Directions for Enchiladas

  1. In a large skillet to cooked, diced chicken breast, add 1 can drained black beans, 1 C frozen corn, 1 C chopped fresh spinach and 1/2 C enchilada sauce. Saute until heated through.

  2. Using flour tortillas, scoop approx 1/4 cup chicken mixture into it and add 1 T shredded goat cheddar cheese. Roll up and place in a 8x8 glass dish with seam side down. Repeat with other 4 tortillas.

  3. Pour remaining enchilada sauce over tortillas and bake at 375 for approx. 30 minutes, or until sauce begins to boil. Add remaining cheese to top and cook for an additional 5 minutes or until cheese melts. Serve it up and enjoy!
