Recipe Ingredients for enchiladas

2 portion ( yield from 1/2 lb raw meat ) Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
1 cup, chopped Onions
8 oz Sour Cream
1 cup Fancy Sharp Cheddar Shredded Cheese
2 tbsp Parsley
0.25 medium Red Bell Pepper
0.25 medium raw Bell Pepper Green
0.25 tsp Pepper, Black
0.67 cup (8 fl oz) Water
4 grams Chilli Powder
1 grams Oregano
1/4 tsp Cumin
4 oz Green Chillies
16 oz Tomato Sauce
16 oz Corn Tortillas

Recipe Directions for enchiladas

  1. heat oven to 350. cook beef until brown drain. add onion, sour cream, 1 cup of cheese, parsley, and black pepper. set aside.

  2. heat water, bell pepper, chili powder, oregano, cumin, chilies, garlic and tomato sauce to boil. reduce to low let simmer. dip each shell into sauce both sides fill with 1/4 cup beef mix. roll them up, place in rectanglar baking dish pour over remaining sauce. bake uncovered 20 min. top with remaining cheese.
