Enchiladas Recipe

Makes 8 servings



1 enchilada serving size Preheat oven to 350F.

Recipe Ingredients for enchiladas

1 small onion
1 small green pepper
1 c mushrooms
1 tsp canola oil
1 lb chicken breasts
14 oz diced tomatoes
8 oz philadelphia cream cheese
1/2 c shredded cheese
8 tortillas

Recipe Directions for enchiladas

  1. Cook and shred chicken; set aside.

  2. Saute onion, pepper and mushrooms.

  3. Stir in chicken, tomatoes, and cr cheese.

  4. Place 1/3 chicken mixture on tortilla; roll up.

  5. Place seam-side down in 13x9" pan; sprayed.

  6. Top w/ shredded cheese.

  7. Bake 15-20 min until heated through.
