Meat, cheese and tomato based Mexican enchiladas

Recipe Ingredients for Enchiladas

1 pound extra lean ground beef
2 teaspoons garlic
2 tablespoons water
2 teaspoons salt
1 tablespoon chili powder
1/3 c. cheddar cheese
12 medium tortillas
3 tablespoons olive oil
1/2 c. chopped green bell peppers
1/4 c. chopped onions
3 tomatoes
6 1/2 ounce tomato paste
1 beef bouillon cube
3/4 c. water
1 dash cumin
1/2 teaspoon salt
1/8 teaspoon pepper

Recipe Directions for Enchiladas

  1. In a medium skillet, over low heat, saute beef, stirring with garlic, salt, water and chili powder.

  2. Cook until beef is browned.

  3. Remove from heat.

  4. In hot oil in skillet, saute garlic, onion and green pepper until tender, approximately 5 minutes.

  5. Remove from heat.

  6. Stir in undrained tomatoes and paste; mix well and bring to boiling, stirring over medium heat.

  7. Dissolve bouillon cube in 3/4 cup boiling water and add to mixture along with salt and pepper.

  8. Simmer 5 minutes to thicken slightly.

  9. To assemble, preheat oven to 350.

  10. Place 1/3 cup of meat filling in a 13x9 inch baking pan. Fill tortilla shells, fold shells and place in pan. Pour tomato sauce over all. Sprinkle top with grated cheese.

  11. Back for 25 minutes.
