Enchiladas (use 1/4 cup italian dressing and 1/2 cup salsa instead of enchilada sauce)

Recipe Ingredients for Enchiladas

5 tortillas
8 ounces ground beef
6 ounces peppers, diced
6 ounces onions, diced
1 tbsp chili powder
1/2 cup fat free sour cream
2 ounces cheddar cheese
1 1/4 cup enchilada sauce

Recipe Directions for Enchiladas

  1. Brown beat in a skillet on medium-high heat. Stir in peppers, onions, and chili powder. Cook until peppers are crisp-tender and remove from heat.

  2. Stir in sour cream and 1 ounce cheese. Spoon meat into tortillas, roll up, cover with sauce and sprinkle with remaining cheese.

  3. Broil 4 to 6 inches from heat until cheese is melted and bubble.
