A very simple and quick enchilada recipe.

Recipe Ingredients for Enchiladas

1 1/8 cup enchilada sauce
1 3/4 cup diced tomatoes
1 3/4 cup pinto beans
1 tbsp minced garlic
12 corn tortillas
1 lb grated cheddar cheese

Recipe Directions for Enchiladas

  1. Preheat oven to 400.

  2. In a heated saucepan, add enchilada sauce, diced tomatoes, pinto beans and garlic. Bring to a slow boil.

  3. Heat tortillas in microwave for approximately 20 seconds to soften, then place in sauce mixture. Coat well, both sides.

  4. Place cheese on tortilla and roll into enchilada. Place rolled enchilada into oven safe dish.

  5. Repeat until all 12 enchiladas are complete, then top with remaining cheese.

  6. Bake for approximately 20 minutes, or until cheese is melted through.
