Recipe Ingredients for enchiladas

16 oz Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
8 oz Fancy Colby-Jack Shredded Cheese
1 cup, chopped Squash, Summer, Zucchini, Includes Skin
6 tortilla 7" Yellow Corn Tortillas 12ct
226.78 grams Tomato Sauce
0.5 medium (2-1/2" dia) Onions
2 tablespoon Poblano Pepper
4 tsp Chili Powder
2 tsp Cumin
1 tsp Oregano

Recipe Directions for enchiladas

cook and drain beat. Roast chili, saute garlic, onion w/meat and grated zucchini. Add spices and tomato sauce and cook. Put tortilla in sauce to soften or roast on gas flame, stuff with drained meat mix and cheese. Top with juices from meat, cheese and bake until brown.
