Chicken enchiladas get a boost with veggies and soy cheese

Recipe Ingredients for Enchiladas

12 corn tortillas
1 ear corn on the cob
1 zucchini
1 yellow squash
1 yellow onion
2 cup,+chopped+or+diced chicken breasts
2 cups light cheese
16 oz enchilada sauce

Recipe Directions for Enchiladas

  1. BBQ corn on the grill

  2. When cool, cut corn from the cob

  3. Dice zucchini, squash, and onion

  4. Saute vegetables in 1 tbs extra virgin olive oil

  5. Add cooked, diced chicken

  6. Pour 1/2 bottle sauce and 1 cup soy cheese into veggie/meat mixture

  7. wrap tortillas in moist paper towels and microwave until pliable

  8. add 2-3 spoonfuls of mixture into tortilla, roll and place seam down into casserole dish

  9. repeat with remaining tortillas

  10. Pour remaining saue on top of tortillas

  11. Top with remaining soy cheese

  12. Bake in 350-degree oven for 30 minutes or until warmed through and the cheese is melted
