Recipe Ingredients for Enchiladas con Pollo y Queso

4 oz Cream Cheese Original
2 oz Sour Cream
16 oz All Natural Medium Salsa
16 oz Tillamook Cheddar
16 oz Chicken
1 cup kernels Corn, Sweet, Yellow
0.5 tsp Cumin
0.5 tsp Cayenne
1 tsp Salt
8 tortilla Burrito 10" Flour tortillas 14ct

Recipe Directions for Enchiladas con Pollo y Queso

  1. 1. Preheat oven to 325 degrees F.

  2. 2. In a medium bowl cream together the cream cheese and the sour cream. Stir in 1/2 cup of the salsa. Stir in 1 cup of the grated cheese.

  3. 3. In a second bowl toss together the chicken, the corn, cumin, cayenne, salt, and pepper. Add the chicken mixture to the cheese mixture and stir to combine.

  4. 4. In a baking dish spread salsa over the bottom.

  5. 5. Place filling on a corn tortilla, roll up and transfer to the baking dish with the seam side down.

  6. 6. Repeat process for remaining tortillas.

  7. 7. Pour remaining salsa over enchiladas, spreading to coat all of them.

  8. 8. Sprinkle remaining grated cheese over the top.

  9. *Enchiladas may be prepared up to this point 12 hours in advance.

  10. 9. Transfer to preheated oven and bake for 20 to 25 minutes until hot and bubbly.

  11. 10. Enchiladas may be reheated, covered with aluminum foil, before service.
