This is a delicious meal if you are wanting a cheat day, but on a regular day cut in half and share with someone else and add a salad with it.

Recipe Ingredients for Enchilada Stacks

52 g yellow corn tortilla's
85 g cooked ground beef
1 cup refried beans
1/4 cup black olives
1/8 cup yellow onion
1/4 cup enchilada sauce
1 cup Mexican Four Cheese Blend
1/2 cup salsa

Recipe Directions for Enchilada Stacks

  1. Combine ground beef, refried beans, black olives, and onion.

  2. Heat up enchilada sauce in skillet, soak corn tortilla's in sauce.

  3. Lay first tortilla on cookie sheet, put half the mixture on tortilla.

  4. Cover with half of the cheese.

  5. Put second tortilla on top.

  6. Put the rest of the mixture on second tortilla.

  7. Cover with the rest of the cheese.

  8. Put in oven at 400 degrees till cheese is melted.
